Using sourdough starter: Waffles & Pancakes


I wanted to try to make something different with my sourdough starter (Claude). So I put Claude to work and here we go: waffles and pancakes! Unfortunately the pancakes were gone before I could take a picture so I had to make some more at the weekend... more pancakes, what a chore! :p I used the recipes from Adelirose. Here is a quick version...

Pancakes: Dilute 75g sourdough starter in 1/4L tepid water. Add 250g flour. Let it rest at least 3h. Add 3 eggs, 2 tbsp oil, then milk little by little (how much depends on the consistency of your starter). Let it rest again 1 or 2h.

Waffles: mix 375g flour, 125g sugar, 1pinch salt, 4 eggs, 200g melted butter. Add 125g sourdough starter. Add milk little by little (how much depends on the consistency of your starter). Let it rest 1 or 2h before using.

Je voulais essayer de faire autre chose que du pain avec mon levain (Claude). Donc j'ai mis Claude au boulot: gaufres et crêpes! Malheureusement les crêpes ont toutes été mangées avant de pouvoir prendre une photo donc j'ai dû recommencer ce weekend... encore des crêpes, quelle corvée! :p J'ai utilisé les recettes d'Adelirose ici (sans sucre ni rhum) et (sans cannelle).
